SCALE & MIX
- Batter: Mix a small batch of the Westco Westco Ultra Rick Creme Cake Mix according to bag directions.
- Raspberry Swirl: Measure out 2 lbs batter and mix in 1.5 oz of raspberry fruit-o. Adjust to taste. General rule is when the color looks right, the flavor will be right as well.
- Streusel: Cut the cold butter into 1-1/2 inch chunks. Add mix and butter to a mixer bowl. Using a paddle attachment, mix on low speed for 2 to 4 minutes until combined and crumbly. This will yield a lot of streusel. Use what you need and save the rest for next time.
Spray loaf pan with pan coating. Deposit and spread batter evenly onto loaf pan until 3/4 full. Top with crystal sugar and streusel.
Bake at 350F in a convection oven for approximately 45-60 minutes.
Let the loaves cool completely before slicing and serving.
