SCALE & MIX
- Cake Mix: Scale and mix the donut mix according to the instructions on the bag for a small batch adding. Use your scale to weight all the ingredients, including the water.
Add 1 to 1.5 ounces of Westco peppermint emulsion flavor and 30 drops of green food coloring or until desired color is achieved into your cake batter mix. When batter is colored and flavored add 4 ounces of C’est vivant chocolate chips. Using a 3¼ inch cake donut mold add 1.5 ounces of cake batter per cavity until all 6 are filled.
Bake at 320F degrees in a rack oven for 15 min. when using a reel oven or convention oven bake at 340 degrees.
Pour 1lb of chocolate dipping icing in a container, warm it up in the microwave to 110 degrees. Once dipping icing is warmed start dipping cake donuts and sprinkle green or chocolate sprinkles.
