America’s recent manned space flight might have flown under your radar because the pandemic and current events completely dominate the media these days.  While our attention was diverted, NASA – in conjunction with SpaceX – sent two American astronauts to the International Space Station to return last week after a two-month adventure in space.  Both the liftoff and splashdown were “edge-of-the seat” thrilling positive successes for our country.  If you missed it, here’s a link to see the lift-off (3 minutes – thrilling):

The objectives of space flight and bakeries is exactly the same:  to set a goal; to develop a plan and procedures to achieve the goal; and then to JUST DO IT.  In between, there are all kinds of obstacles which must be overcome.  Regarding space travel, a newer, sleeker, more efficient capsule and advanced computer systems and telemetry was developed to get to the Space Station and back.  In the case of a bakery, your entire operation and display case should reflect the same thoughtful long-term planning and care.  Step back from the day-to-day baking operation for an afternoon.  Think about where you’d like your shop to be.  And then do it!
