Mix Westco Master Mix Yeast Raised Donut Mix according to the directions on the bag for a small batch.
REMEMBER: Use your scale to weight all the ingredients, including the liquids. Use your thermometer to achieve a finished dough temperature of 80°F.
Bundle the dough. Let the dough rest an additional 15 minutes. Roll out and cut into bars.
Proof in a medium dry proof box between 90°F and 100°F. Fry at 375°F for 55-60 seconds per side in BakeSense Palm Fry Shortening.
Use .5 OZ of Liquid Color Gel per 1 LB of Westco Sup-R-Fluffy Vanilla Buttercreme to mix each color of your rainbow. After the donuts have cooled down completely pipe on each color in a rainbow on the top 1/2 of the donut. Spread some buttercreme on the bottom 1/2 of the donut and cover with Sprinkelina Gold Sprinkles. Using a 1/4″ round piping tip, make the clouds between the two halves.
