Instructions
MIX
- Mix the batter following the directions provided on each bag of Westco Ultra Rich Crème Cake Mix for a small batch.
- Scale 4 LB of batter. Add to the scaled batter 4 oz. dried purple yam, 1 oz. ube flavor, 10 oz. Westco Pineapple Filling and 5 oz. almond flour. Mix together on low speed until well blended.
MAKE UP
Deposit 5 ½ oz. of batter into large muffin tins lined with baking cups. Sprinkle some Westco Flake Sweetened Coconut over the top of the muffins.
BAKE
Bake at 335-365°F for 28-35 minutes or until internal temperature reaches 205°F.
