Lemonade Cupcakes

Yield: 50-52 1.5 oz cupcakes

Two things are true: 1. End of summer BBQs must need a sweet cold Lemonade to cool you off and 2. Everyone loves cupcakes. Creating treats that mix these two truths, PRICELESS! These Lemonade Cupcakes are what your customers will be looking for as they sign up to bring a dessert to their BBQ. Something that will be a sure fire hit for a limited time offer at the end of summer.

Instructions

SCALE & MIX
  • Cake Mix: Scale and mix 2 lb 8oz  of Westco Extra Extra Rich White Cake Mix according to the instructions on the bag for a small batch adding 3 oz of Westco Lemon Fruit-O to your Mix. Use your scale to weight all the ingredients, including the water.
BAKE

Bake at 320 degrees for 12 min or until fully baked. When using a conventional oven or reel oven set temp 20 to 30 degrees higher.

FINISH

Mix in 2 oz of Westco’s Raspberry Fruit-O Concentrate into 2 lb of Westco’s Vanilla Buttercréme until fully colored and developed.

Once cupcakes are completely cool, using a star pipping tip pipe 1.5 ounces of vanilla butter cream and finish with some fresh raspberries!
