Raspberry Swirl Loaf

Yield: Eight (8) 24oz loaves

Instructions

SCALE & MIX
  • Batter: Mix a small batch of the Westco Westco Ultra Rick Creme Cake Mix according to bag directions.
  • Raspberry Swirl: Measure out 2 lbs batter and mix in 1.5 oz of raspberry fruit-o. Adjust to taste. General rule is when the color looks right, the flavor will be right as well.
  • Streusel: Cut the cold butter into 1-1/2 inch chunks. Add mix and butter to a mixer bowl. Using a paddle attachment, mix on low speed for 2 to 4 minutes until combined and crumbly. This will yield a lot of streusel. Use what you need and save the rest for next time.
MAKE UP

Spray loaf pan with pan coating. Deposit and spread batter evenly onto loaf pan until 3/4 full. Top with crystal sugar and streusel.

BAKE

Bake at 350F in a convection oven for approximately 45-60 minutes.

FINISH

Let the loaves cool completely before slicing and serving.
