Instructions
SCALE AND MIX
Scale 3 ½ LB scrap dough from left-over Westco Master Mix Yeast Raised Donut Mix prepared according to the directions on the bag. Using a bench scraper chop in 6 oz. Westco Cubed Cut Apple Filling, 4 oz. BakeSense Spice Cinnamon Ground and flour. To prevent excessive fat absorption only use as much flour as necessary to hold the dough together.
MAKE UP
Divide the dough into 3 oz. portions. Flatten the pieces in flour and place on a frying screen. Leave plenty of space between the fritters. The fritters will expand dramatically when placed in the fryer.
PROOF AND FRY
- Form fritters. Proof in a dry proof box until fritters reach half of their final size. Do not over proof as this will increase fat absorption. Let the fritters sit 10 minutes after removing them from the proofer and before frying.
- Fry at 375°F for 75 seconds per side in BakeSense Palm Fry Shortening.
FINISH
Let the fritters drain for 45 second after frying before glazing with Westco Super Speedee Glaze.
