Instructions

CAKE

Prepare a small batch of Multifoods Complete Devils Food cake mix, per directions on the bag. Bake thin layers in full sheets, cool, and cut into rounds, or bake in desired pan size and cut in half horizontally. One batch will make 18-20 cakes, so freeze and use as desired.

TOPPING

Combine Graham Cracker crumbs, sugar and melted butter, until all incorporated. Evenly spread out onto a parchment lined sheet pan and place into the refrigerator to set.

MOUSSE

In the bowl of a mixer, fitted with the paddle attachment, mix the cream cheese with the RTU Maple Icing, until fully incorporated, lighter in texture and smooth. Switch to the whisk attachment and add in the whipped topping. Whip the mixture until very thick, and set.

Remove the set crust from the fridge and crumble to break apart. Set aside.

BUILD THE CAKE

Line a 10″ ring mold with cake collar. cut cakes into the desired diameter and lay down one base layer into the acetate/ collar lined ring mold. Lightly spread additional RTU Maple Icing atop cake layer, this helps to keep the cake moist, as well as enhance the maple flavor. Layer on the maple mousse and place another cake layer atop the mouse, and repeating with additional maple icing.

Sprinkle the top of the iced layer with the graham crumble, and place the whole cake into the fridge, until fully set, about 12 hours, or overnight. Remove from the ring mold when ready to serve.
