La principale fonction de la levure dans la p\u00e2te lev\u00e9e est de produire du dioxyde de carbone. Ce gaz fait lever la p\u00e2te et rend votre produit l\u00e9ger, a\u00e9r\u00e9 et d\u00e9licieux, mais il ne fonctionnera correctement que si la levure est correctement ferment\u00e9e. Les trois facteurs critiques pour une fermentation correcte sont : 1) la temp\u00e9rature de la p\u00e2te, 2) le temps de repos et 3) l&rsquo;\u00e9preuve.        <\/p>&#13;\n&#13;\n<h4 class=\"wp-block-heading\"><strong>TEMP\u00c9RATURE DE LA P\u00c2TE<\/strong><\/h4>&#13;\n&#13;\n<p>La levure fonctionne bien \u00e0 une temp\u00e9rature comprise entre 78\u00b0f et 82\u00b0f. Si la temp\u00e9rature est inf\u00e9rieure \u00e0 78\u00b0f, la levure fermente trop lentement et produit un faible niveau de dioxyde de carbone. Si la temp\u00e9rature d\u00e9passe 82\u00b0f, la levure produit du gaz trop rapidement et certaines cellules de levure sont tu\u00e9es, de sorte qu&rsquo;elles ne produisent pas du tout de gaz carbonique.    <\/p>&#13;\n&#13;\n<h4 class=\"wp-block-heading\"><strong>TEMPS AU BANC<\/strong><\/h4>&#13;\n&#13;\n<p>Le but du temps de repos est de faire passer la levure du stade dormant au stade actif afin qu&rsquo;elle produise la bonne quantit\u00e9 de gaz carbonique. Si le temps de repos est trop court, la p\u00e2te sera moins \u00e9lastique et aura peu de go\u00fbt. Si le temps de repos est trop long, le volume peut \u00eatre perdu au cours du processus de fermentation ; les beignets r\u00e9tr\u00e9ciront pendant la friture ; la texture sera grossi\u00e8re ; et la saveur ne sera pas \u00e0 la hauteur de vos attentes. Les deux facteurs importants pour un bon \u00e9tuvage sont une temp\u00e9rature et une humidit\u00e9 correctes.    <\/p>&#13;\n&#13;\n<p>En r\u00e8gle g\u00e9n\u00e9rale, la temp\u00e9rature de votre chambre de fermentation doit \u00eatre d&rsquo;environ 95\u00b0F, et la quantit\u00e9 d&rsquo;humidit\u00e9 dans l&rsquo;air doit \u00eatre r\u00e9gul\u00e9e de mani\u00e8re \u00e0 ce qu&rsquo;il y ait un brouillard \u00e0 l&rsquo;int\u00e9rieur de la porte de la chambre de fermentation.
